Hydrolysis process should be carried out by utilizing terrnamyl enzyme and glucoamylase due to produce hydrolysed sago starch (HSS) syrup to convert starch into glucose. It is necessary to remove the fibre in order to enhance quality of glucose syrup. Hence, the purification methods such as filtration, hydrocyclone, centrifugation and powdered activated cbatcoal are crucial for producing high quality ofproduct supplied to consumers. Among mose methods, the drawbacks are faced including cost and rate of efficiency. Dissolved air flotation (DAF) system, differential with conventional sedimentation clarifiers, was studied with the purpose to overcome the problems. DAF is a technique which designed by using air bubbles to generate the suspended solids floated to surface. Foaming agents, for example egg white and bovine serum albumin (BSA) were used to aid the efficiency of DAF system. From the results, the effects of egg white as surfactants in the DAF system obtained better results than the BSA. We can conclude that the DAF system has potentia! to be used for sugar production industries as several of parameters are optimised and controlled.
