Summary:In the initial stage of the study, the effects of the different shaker speeds (l 00 rpm, 150 rpm and 200 rpm) in Ethanol Coagulation method were investigated. The result shows that there are no significant different between three volumes, however the brightness of the serum shows that 200rpm was suitable for ethanol coagulation. The effects of different volumes of the Natural Rubber Serum ( I 0mJ, 20ml and 30mJ) as a protein source were examined for lactate production using Lactococcus lactis IO-I. The batch fermentation was carried out using shake flasks with initial pH adjusted at pH 6, temperature of 3 7"C and agitated at 200 rpm. The fermentation was conducted under controlled pH throughout the processes. The result obtained was not significant to determine the accurate efficiency of any volumes ofNRS as a protein source due to low amount of lactate produced. However, among the volumes studied, 30ml NRS shows higher fermentation efficiency, 8.36% which 1.2% higher than both 10ml and 20 ml NRS respectively in producing lactate. At the encl of the fermentation, 30mJ NRS was produced 1.85 g/L lactate with 8.36% fermentation efficiency.
