Summary:Modelling and simulation of break system for wheat flour production was conducted by using SuperPro Designer. The unit procedures involved in break system of wheat flour production include breaking, cyclone centrifugation, sieving, purifying, bran screening and mixing. The model was sucessfully simulated and analysis reports such as stream and materials and economic evaluation were generated. ln the break system, the total wheat grains fed in was 44,407.895 kg/h. The total endosperm extracted by Malayan Flour Mills (MFM) was approximately 76.66%. About 6.34% of endosperm was removed together with bran in cyclone centrifugation and bran screening. Based on the estimation conducted by SuperPro Designer, the total capital invested for developing break system was $ 14,340,000. Meanwhile, the operating cost was estimated to have $ 67,335,000 per year. The utilities cost occupied 0.28% of the operating cost and the annual amount of power consumed was 2,099,849 kW/h. Based on the MFM’s model, a modified version was constructed. For the modified model, the total capital invested was 0.32% lesser than MFM’s model. Moreover, the annual operating cost for modified model was 0.03% lesser than MFM’s model. Hence, as compared to MFM’s model, the modified model was more preferred in term of economic prospective.
