Ice cream production is divided into three parts (Part A, B and C). Part A deals with raw materials through mixing and pasteurization process; Part B involves processing of ice cream ingredients which consists of homogenization, cooling, ultrafiltration and aging process, while Part C is the ice cream product handling section which includes freezing or whipping, heat exchanging and filling process. PFD for premium chocolate ice cream production was successfully simulated in this study.
