Description
Summary:Nowadays, banana peels are usually considered as wastes and are discarded during the processing, which contribute to the pollution of an environment. Hence, this study was aimed to extract pectin from banana peels using acid extraction method. The yield of pectin obtained was 27 % and the functional group of the pectin was analyst by Fouriertransform infrared (FTIR) spectroscopy. The functional group of commercial pectin was compared with extracted pectin. Furthermore, the antibacterial activity was carried out on the extracted pectin using agar well diffusion with Gram-negative bacteria, Escherichia coli and Gram-positive bacteria, Staphylococcus aureus. The obtained result showed antibacterial properties of pectin was higher than ampicillin through measurement inhibition zone. Thus, banana peels waste‟s extract which is pectin could be potential antibacterial sources and may be an effective uses as antibacterial agent in pharmaceutical industries in future.
